Preheat oven to 400 F. |

In an oven-safe skillet, heat oil on medium-high heat. |

Add the onion, carrots (or sweet potato), parsley and ½ cup of orange juice. Cook for 5–8 minutes. |

In a small bowl, mix ½ cup orange juice and honey. |

In the center of the skillet, add the salmon fillets and season with salt and pepper. |

Pour the orange juice and honey mixture over the top. |
